Coconut Pineapple Margarita
With the warm Florida spring weather we’re having, it’s really hard not to jump right into summer themed cocktails! Margaritas are a classic go to (for all seasons) and this Coconut Pineapple Margarita is no exception!
Coconut can easily be overly sweet and overpowering in a cocktail, but the addition of pineapple and lime juice make this cocktail balanced, with a touch of sweetness.
I would highly recommend that you use unsweetened coconut milk for this cocktail, since you can then control the sweetness with honey or agave.
If you’ve followed me for awhile, you’ve probably noticed that I normally only use honey, fresh fruit, or occasionally a small amount of liqueur to sweeten my cocktails.
I only like to use natural sugars when I can because it’s healthier and I’ve never been a big fan of sweet drinks (besides sweet tea).
But luckily, recipes are served as a guide and you can add as much sweetness as you prefer!
So let’s get to it!

What You’ll Need To Make a Coconut Pineapple Margarita
For 4 servings
- 1 Cup of Canned Unsweetened Coconut Milk
- 1/4 Cup of Pineapple Juice or 1/2 a Pineapple – Chopped
- 1 Lime – Juiced
- 6 oz of Silver Tequila
- 1.5 Tbs of Melted Honey, Agave, or Simple Syrup
For Rim
- Kosher Salt
- 1 Lime – Zested
How To Make It
In a cocktail shaker full of ice, add all the margarita ingredients and shake for at least 30 seconds.
If you happen to have fresh pineapple on hand, I would substitute it for the pineapple juice and add everything to a blender instead. If you like your margaritas frozen, you can also add 1/2 – 1 cup of ice to the blender as well.
Before measuring out your canned coconut milk, make sure to shake the can throughly before opening so all the creamy coconut goodness is equally dispersed.
I love a salty rim for my margarita and adding a bit of lime zest to the rim makes it a little extra special (but totally optional)!
Wet your glass rim with a lime wedge and coat it liberally with your lime zest salt mixture. Add ice and pour up your margarita. Garnish with a lime wedge and enjoy immediately!
