Crispy Cheddar Wafers Recipe
The Story
I was able to grab this delicious crispy cheddar wafers recipe from my momma last summer. It’s always the biggest hit at any cocktail party or just for the family.
We made these for our drive by Lowcountry Cocktail Party and we barely had crumbs left behind! They’re crunchy, salty, and have a little kick of cayenne so they’re the perfect appetizer.
What You’ll Need To Make Crispy Cheddar Wafers
- 2 Cups of Freshly Grated Extra Sharp Cheddar
- 1 Cup of All Purpose Flour
- 1/2 Cup of Room Temperature Butter
- 1 Cup of Crisp Rice Cereal
- 1 Teaspoon of Salt
- 1/2 Teaspoon of Cayenne Pepper (You can add more or less to your taste preference)
The Recipe
- Preheat the oven to 350 F
- Mix together the cheese, butter, flour, salt, and cayenne pepper in a large bowl until you form a large ball.
- The ball should be slightly sticky and all the flour should be incorporated (using your hands to mix everything together is the best way).
- Take the rice cereal and gently fold it into the dough.
- Shape mixture into 1 inch balls and place on an ungreased baking sheet.
- Make sure to leave 1 inch between each ball.
- Take a fork and flatten each ball, making a crisscross pattern
- Rinse fork in a small bowl of hot water before flattening the next ball.
- Bake wafers for 15 minutes or until firm.
- Cool on pan on a wire rack for at least 10 minutes before serving.
- Store in an airtight container for up to a week.
I can’t say enough on how important it is to use freshly grated cheddar cheese. The prepackaged cheese doesn’t have the same flavor intensity and it will not bind with the dough appropriately.
Pro Tip: Quickly grate your cheese by using a food processor fitted with a fine shredding blade. This will give you your 2 cups of grated cheddar in seconds!
I love this recipe because it’s a family favorite and it’s so easy to make quickly for a party, or if you’re just craving an easy snack to have in the afternoon!
