Key Lime Ice Cream Sandwiches

It’s National Ice Cream Sandwich Day and it couldn’t have come at a more perfect time of the year! August is the hottest month down here in Florida and any opportunity to enjoy a frozen treat is always welcomed! These Key Lime Ice Cream Sandwiches are the perfect amount of sweet and tart, making them a fun and tasty twist to a classic!

This recipe is made with a homemade no churn key lime ice cream (which is super simple to make) but you can also opt for a store bought key lime ice cream if you’re pressed for time.

So let’s get to it!

What You’ll Need to Make Key Lime Ice Cream Sandwiches

For 10-12 mini ice cream sandwiches
  • 14 oz of sweetened condensed milk
  • 2 cups of heavy whipping cream
  • 2 teaspoons of vanilla extract
  • Juice and Zest of 2 limes
  • shortbread/gingersnap cookies or graham crackers

How To Make It

With an electric mixture, beat the heavy whipping cream until stiff peaks begin to form. This will happen quicker if you let your mixer bowl sit in the freezer for about 30 minutes beforehand.
In a large mixing bowl, stir together the sweetened condensed milk, lime juice, lime zest, and the vanilla extract. Gently fold in the whipped cream, being careful not to overmix!

Pour the ice cream mix into a loaf pan and sprinkle with more lime zest. Cover the loaf pan with some parchment paper and place in the freezer for at least 6 hours. Once the ice cream is frozen solid, take a small cookie scoop (or a tablespoon sized measuring spoon) and carefully scoop your ice cream onto your shortbread cookie/graham cracker. Carefully place the top cookie/cracker on top and set down on a plate.

I like to sprinkle a little more lime zest on the sandwiches for more color and flavor. Once assembled, place your key lime ice cream sandwiches in the freezer again for about 30 minutes to an hour. This will ensure that they’re cold enough to eat without making a mess!
