Pineapple Mojito Refresher
As the weather’s warming up, I’ve been inspired to make refreshing (and flavorful) cocktails to beat the heat! This Pineapple Mojito Refresher checks all the boxes! With muddled cucumbers, herbs, and a splash of sparkling water, this drink will be a summer favorite in no time!
I’ve always leaned towards the classic margarita for a summer happy hour. However, lately, I’ve slowly started to appreciate the classic mojito. They’re known for being full of citrusy, refreshing flavors and I’m excited show them a little more love this season!

What You’ll Need To Make a Pineapple Mojito Refresher
For 2 servings
- 8 cucumber slices
- 3 oz of white rum
- 1 lime – juiced
- 5 sprigs of cilantro
- 5 sprigs of mint
- 1/2 cup of pineapple juice
- splash of sparkling water
How To Make It
In an empty cocktail shaker, add the first five ingredients and muddle until the cucumber slices are broken down. Then, add ice and the pineapple juice. Shake for at least 30 seconds. Pour up your pineapple mojito refresher over a glass filled with ice and garnish with lime & cucumber slices, cilantro, and mint!
This would be the perfect refreshing pool or beach side cocktail with all the fresh herbs, pineapple juice, and the splash of sparkling water!
A couple of weeks ago, I found a pineapple mint plant while in the gardening section and it’s been my go to mint for cocktails! It has a more tropical flavor and is more muted in comparison to traditional mint. Since I’m not a huge mint fan, this is the perfect compromise!
