Honey Rosemary Gimlet
We love a good gimlet around here and this Honey Rosemary Gimlet is a great year round tipple! It only has three ingredients, however, I’ve always been told that simple is usually always better (when you use high quality ingredients). A true classic gimlet only contains gin, lime juice, and simple syrup. So it’s simple enough for beginning home mixologists to make yet delicious enough for all cocktail enthusiasts to enjoy!
So let’s get to it!

What You’ll Need To Make a Honey Rosemary Gimlet
for one serving
- 2 oz gin
- 1 oz lime juice
- 1 oz honey rosemary syrup
- rosemary sprig or dehydrated lime wheel, for garnish
Honey Rosemary Syrup:
- 1 cup water
- 1 cup honey
- 4 to 6 rosemary sprigs
Add everything to a small saucepan over medium heat, stirring occasionally. After 5 to 10 minutes, the honey should be incorporated and the syrup should begin a slow simmer. Take the pan off the heat and let the rosemary steep. After the syrup has cooled completely, transfer to an airtight container and store in the fridge for up to 3-4 weeks. These syrup bottles are my absolute go to’s because they allow me to both pour and store from the same bottle (and they’re easy to wash).

How To Make It
In a cocktail shaker filled with ice, add all three ingredients and shake vigorously until well mixed and chilled. Strain into a glass and garnish with a fresh rosemary sprig or dehydrated lime wheel. The gimlet can be easily customized with your choice of simple syrups (like this strawberry basil syrup)!
