Roasted Tomato Soup

With the crazy cold winter we’ve experienced this year, soup has been on the forefront of my mind this season! This Roasted Tomato Soup is perfect for those extra cold days when you just need something warm and filling. Tomato soup is one of my favorites and I love how simply delicious and somewhat healthy this recipe is!

Made with ripe whole tomatoes, onions, and a head of fresh garlic, this soup will have your home smelling incredible!

So let’s get to it!

What You’ll Need to Make Roasted Tomato Soup

For 4 Servings
  • 10-12 Whole Tomatoes From the Vine
  • A Yellow Onion – halved
  • A Head of Fresh Garlic
  • 1 Tbs of Extra Virgin Olive Oil
  • A Fresno Chili – seeded and chopped
  • 2 Tbs of Salt & Pepper
  • 3 Tbs of Italian Seasoning
  • 1/2 Cup of Chicken or Vegetable Broth
  • 3/4 Cup of Heavy Whipping Cream
  • 6 oz of Tomato Paste
  • Fresh Basil Leaves

How To Make It

  1. In a big casserole dish (or baking sheet), toss in your ripe tomatoes and an onion that’s peeled and cut in half. Take your head of garlic and chop 1/4 inch of the top, exposing the cloves. Place the garlic with the tomatoes and onions.
  2. Drizzle everything with olive oil until well coated (especially the garlic). Season with 1 TBS of salt and pepper.
  3. Place in a 425 F oven and roast for 30 minutes or until the tomatoes are charred and the onion and garlic are soft and golden.
  4. Take the casserole dish out and let it rest for 20 minutes or until everything is cool enough to handle.
  5. Transfer the roasted tomato mix and the juices into a blender. Puree until smooth.

Depending on the size of your blender, you may need to do this in sections. If you to have an emulsifier, you can transfer everything to a large pot and emulsify until well blended.

6. Transfer the tomato soup into a pot over medium on the stove. Stir in the Italian seasoning, salt, pepper, chopped Fresno chili, broth, tomato paste, and heavy whipping cream. Cook for about 5-10 minutes until warmed. Stir in the chopped basil and serve.
