Blackberry Thyme Gin Fizz
This Blackberry Thyme Gin Fizz cocktail recipe is a love letter to the two ingredients that I feel don’t get the summer recognition they deserve. When people think of blackberries, their minds generally lean towards blackberry cobblers, galettes, or to eat straight from the carton. However, blackberries are extremely versatile and are one of my favorite berries to use for cocktails (like this Blackberry Bramble).
When paired with flavors like lemon juice and thyme, the blackberry can really shine bright and bold. If you’re like me and gin is your happy hour love language, then you’re going to love this cocktail…

What You’ll Need To Make a Blackberry Thyme Gin Fizz
for one serving
- 6 to 8 fresh blackberries
- 3/4 oz lemon juice
- 2 oz gin
- 3/4 oz honey
- 3/4 oz elderflower liqueur
- 4 sprigs of fresh thyme
- one egg white
- sparkling water, chilled
How To Make It
In a cocktail shaker, add the first four ingredients and muddle until the blackberries are well broken down. The lemon juice will help with the breakdown process and muddling the fresh thyme adds a beautiful earthiness flavor.
Once you’re done muddling, add the egg white and give the shaker a dry shake (which means shaking without ice). This is essential when creating the classical gin fizz foam. Shake for about fifteen seconds before adding the ice. Shake again to chill your gin fizz.
In an old fashioned glass, pour up your blackberry thyme gin fizz through a strainer. Then, add chilled sparkling water (or club soda). My glass was filled only halfway with the entire blackberry gin mix, then the rest is top with chilled sparkling water. Garnish with fresh blackberries and thyme and enjoy!
