My Favorite Avocado Toast

Hey Y’all! Today, I wanted to share my favorite avocado toast recipe of all time! This recipe was inspired by one of my favorite breakfast joints in Coral Gables, the Threefold Café!

This avocado toast is anything but average! With fresh basil, salty feta, and mushrooms, this recipe is perfect for breakfast or brunch!

It’s my favorite avocado toast because it’s so unique, fresh, and gourmet! I always grab a slice whenever I’m in the Gables but I wanted to recreate it to enjoy at home!

What You’ll Need to Make My Favorite Avocado Toast

For One Serving

1/2 a Small Carton of Sliced Baby Bella Mushrooms

1/4 block of Feta Cheese

1/2 an Avocado

Juice from 1/2 a Lime

6 fresh Basil leaves

2 slices of toast

Pinch of Salt And Pepper

1 Tbs of Olive Oil

How To Make It

Place mushrooms in a colander and throughly rinse them in the sink. Transfer the mushrooms onto some paper towels and pat dry. Season with a little salt to draw out the extra water and pat dry again after a few minutes.

Toss the mushrooms into a medium heat skillet with olive oil and season with salt and pepper. Slowly cook the mushrooms until they’re golden and tender. Take off the heat and set aside.

While cooking, extra water can begin to accumulate halfway through. Just carefully drain the pan of the excess liquid and return to stove to finish off the mushrooms.

Place avocado into a bowl and smash with a fork. Add lime juice, basil, salt, and pepper. Mix until well incorporated.

Place avocado mixture on top of your toast and add your sautéed mushrooms, feta, and finish off with a little more basil.

And that’s it! It’s really simple but packed with so much fresh flavor!

I originally thought the combination of basil and lime was a little weird but it really works when combined with the creamy feta and earthy mushrooms! It really gives it the freshness it needs.

I love making this avocado toast for breakfast when it’s a slower morning and I can enjoy it with a coffee! Fun Fact: this recipe was actually what I made for breakfast for the morning of my wedding!
