Pomegranate Prosecco Spritz

I’ve got the perfect Valentine’s Day cocktail for y’all! Introducing, the Pomegranate Prosecco Spritz! This beautiful and bubbly cocktail gives all the romantic vibes and the gorgeous red hue makes it Valentine’s Day perfect! With bubbly Prosecco and tart pomegranate juice, this drink will pair perfectly with any amazing dinner date you plan with your Valentine!

But to be honest, this cocktail is just as perfect for your Galentine’s happy hour or brunch gathering! It’s got glitz, glam, and everything in between!

So let’s get to it!

What You’ll Need to Make a Pomegranate Prosecco Smash

for two servings

  • 2 oz pomegranate juice
  • 2 oz vodka or gin
  • 3/4 oz honey rosemary syrup or elderflower liqueur
  • chilled prosecco, to top

How To Make It

In a cocktail shaker full of ice, add in the pomegranate juice, vodka, and simple syrup. Shake for 30 seconds.

To make the honey rosemary simple syrup, add equal parts honey and water with a few sprigs of rosemary to a sauce pan over medium heat. Occasionally stir until mixture begins to simmer and the honey has dissolved. Once cooled, strain and place the simple syrup into an airtight container (these bottles are my favorite!) and store in the fridge for up to 3-4 weeks.

In two chilled coupe glasses, divide the pomegranate mixture and top the rest with chilled Prosecco. Garnish with pomegranate arils and rosemary (optional) and serve!

You can usually find pomegranate arils (seeds) in the produce section in your local grocery store. If not, you can also just buy a whole pomegranate and extract them yourself. But why go through that hot mess? Trust me, it’s totally optional.
